The Maldon Crystal Salt Company has been producing table salt for over 200 years. It exports salt around the world, where its texture and taste have made it popular with gourmets and chefs. 1 Getting and cleaning the water ■■ The company uses water from the Blackwater River. ■■ The water comes from the middle of the river, where it’s saltiest. ■■ The water is put in large storage tanks and left to settle. ■■ They filter out tiny pieces of sand and mud. 2 Making the crystals ■■ They pour the water into large stainless steel pans and heat it to boiling point. ■■ Any impurities that come to the surface are removed. ■■ The temperature is carefully controlled for 15 to 16 hours. ■■ As the water evaporates, salt crystals form on the surface. ■■ The crystals slowly grow until they sink to the bottom because of their weight. ■■ Eventually the water reduces to the same level as the crystals. 3 Drying the crystals ■■ The salt makers carefully pick up the crystals, put them in bins and leave them to drain. ■■ They put them in the drying boxes. ■■ When totally dry, the salt is ready for packing and distribution.
