It is not eaten every day but often saved for weekends and holidays. The term “full” comes from the fact that this meal includes many different foods. It was traditionally served at breakfast time, but it may also replace lunch. Egyptian breakfast A popular, ancient Egyptian breakfast dish is called ful medames, which is usually eaten on Fridays. To make the dish, the Arabic word fūl or beans are cooked with cumin, onion, tomato, garlic and parsley. These beans are often accompanied by a selection of sides: flat breads, tahini sauce with lemon, hard boiled eggs and chopped tomato and cucumber salads. Ful medames is an Egyptian breakfast recipe which goes as far back as the fourth century where the beans were buried over hot coals to slow cook – medames means “buried” in Egyptian. Today people enjoy it throughout the Middle East, from Sudan to Syria, Israel and Yemen. Tahini is very often served as a side dish or dip.
